I'm amazed you are still using your old stove. Most of the creators upgrade their kitchen to modern within short period of time but you are keeping it simple. Really you awesome. Simplicity rocks 👍👍
Once upon a time, some 75+ years ago, no gas cooking, no pressure cooker, in North India dal was cooked on “angeethi” coal/wood burnt without much control of intensity of heat. So the container is filled with water, “daal”, garlic, cut ginger & salt and cooked for long. If water reduces just add more water. Different legumes would take different time. Then came the gas in cylinders & in some cities piped like water supply. Mostly procedure stayed the same, fill the container with water, add ingredients & cook on high heat. Add water if needed. Some technical people started cutting the heat to medium flame and then word of mouth spread it all over. Basically cooking on high & medium heat. Then came the pressure cooker with measurement of ingredients & water including how long the container (pressure cooker) stays on high flame, typically in terms of whistles with whisking pressure cookers & time for other types. I have seen many TH-camrs are still following this technique of using high/medium flames. I am a technical person, have read thermodynamics and applied in my cooking since 1975 & have objection to these practices of high & medium flames in normal cooking. Initial heating to bring the water including ingredients to boil needs to be high flame so water reach heat carrying capacity is achieved. Once it starts boiling, cover the pressure cooker to build steam increase steam pressure increasing internal temperature to cook but without adding full flame heat energy. One needs to set the flame to simmer, because that much energy is needed for additional process in pressure cooker. Which results in saving gas consumption two ways, thermodynamically & time wise. Gas flames usage should be an important part of recipe. For healthy cooking ingredients like veggies need to be cooked at lower heats (lower flames) so pressure cooker is not a good idea (creates high temperatures). Another issue is on “Salt to Taste”. What is this concept? An amateur cook 1st time comes to the recipe, how much is salt to taste for him or her. How should she starts the titration of salt with whatever they cooking 1st time ever. This question I asked Sanjiv Kapoor and he never replied (actually I never expected as well). Actually “salt to taste” is word of mouth spread worldwide, so nothing defined. Best Wishes. I used to wrap vegies in newspaper but later realised that ink used in newspaper(which can not be detected by eyes) are dangerous to human health in the long run. Instead I bought vacuum sealed containers which help to keep my vegies esp herbs fresh for a long time. Also I wouldn’t recommend using newspapers to remove the smell from the fridge. Instead, place a cut lemon in the middle of the fridge and leave it overnight. Or else in a cup, put 2 tbs baking soda (for optional choice- 2 drops of essential oil- My fav is peppermint) and leave it inside the fridge overnight. That will greatly diffuse all kinds of odour. Infact, baking soda helps to eliminate any kinds of smell, like mouldy room, mouldy washing machine, smelly shoes, carpets and even feet. Try it ! 👍
My mother used to cook 2 chpaateez, together, in our childhood when she cooked halwa in breakfast...... This hack reminded me of that time..... Thank you
