I've always told people in HK, wonton is mainly made of pork and shuikaw is mainly made of shrimp. I don't know why, but in HK it's the other way around. So I think you are using the "original" recipe :) Like
師傅做雲吞的材料與多倫多材料做法絕對不同,各有千秋,不過我都是愛師傅的做法,愛那半肥瘦豬肉,大地魚粉,湯底是大地魚粉蝦頭殼豬骨羅漢果等,是我所愛。

原來我攪左個誤會!今日我再遇見那個師傅,我再請教他關於淥餛飩時間。原來我只記得前部分,他的說法是︰水滾計17秒放餛飩,然後大約三分鐘左右起得,這是即叫即淥餛飩時間。
請問師傅為什麼嗰啲餡料唔放一啲薑蔥入去呢
小候時吃過街边的餛飩沒有鮮蝦但好有味道和口感原來餛純加了肥豬肉粒把餛飩囗感提昇。

要寫低大地魚粉,下次番香港一定要買😁😁
北美華人超市一般都有大地魚賣, 一包有兩三條曬乾的大地魚。 一磅肉只需約條魚八份之一,放在小烤箱(烤麵包爐)低溫200度F (華氏)烤一至兩分鐘至脆, 小心會容易燒焦。 稍涼後用打碎機打成粉。 可以放在雪櫃兩星期慢用。
下次試吓整😋
