    Ingredients:
    500g chicken (cut into medium pieces)
    2 cups of basmati rice (washed and soaked for 30 minutes)
    1 large onion (sliced)
    2 tomatoes (chopped)
    1 tablespoon ginger-garlic paste
    1 cup yogurt (whisked)
    2-3 green chilies (slit)
    ½ cup cooking oil or ghee
    1 tablespoon cumin seeds (zeera)
    4-5 whole cloves
    4-5 black peppercorns
    2-3 cardamom pods
    1 cinnamon stick
    2 bay leaves
    1 teaspoon garam masala
    1 teaspoon red chili powder (adjust to taste)
    1 teaspoon coriander powder
    ½ teaspoon turmeric powder
    Salt to taste
    Fresh coriander and mint leaves for garnish
    4 cups water
    Instructions:
    1. Prepare the Chicken:
    Heat oil or ghee in a large pot.
    Add cumin seeds, cloves, black peppercorns, cardamom pods, cinnamon stick, and bay leaves. Let them crackle for 30 seconds.
    Add sliced onions and sauté until golden brown.
    Add ginger-garlic paste and stir for 1-2 minutes until fragrant.
    Add the chicken pieces and cook on medium heat until the chicken changes color and is slightly browned.
    2. Spices and Tomatoes:
    Add chopped tomatoes, red chili powder, coriander powder, turmeric powder, and salt. Stir well.
    Cover and cook until the tomatoes become soft and the oil separates from the masala.
    3. Yogurt and Cooking Chicken:
    Add the whisked yogurt to the chicken mixture. Stir and cook for 5-6 minutes until the yogurt is fully incorporated and the gravy thickens.
    Add garam masala and green chilies. Stir and cook for another 2 minutes.
    4. Adding Rice:
    Drain the soaked rice and add it to the pot.
    Gently mix the rice with the chicken and masala to ensure the rice is well coated.
    5. Water and Cooking:
    Add 4 cups of water to the rice and chicken mixture. Stir once.
    Bring it to a boil on high heat, then reduce to low.
    Cover the pot tightly with a lid and let it cook for 15-20 minutes on low heat, or until the rice is fully cooked and the water is absorbed.
    6. Final Touches:
    Once the pulao is done, fluff the rice gently with a fork.
    Garnish with fresh coriander and mint leaves for extra flavor.
    7. Serving:
    Serve the Dagi Chicken Pulao hot with raita, salad, or pickles on the side for a complete meal.
