  • Thank you for watching my smoked brisket experiment video. On this video, I smoked 2 briskets, one the traditional way I season a brisket and the other with the exact same rubs but I added MSG to it. I invited a few neighbors to see if they could taste the difference and well, you'll have to watch the video to see their reactions.

    Feel like I’ve been waiting 12 years for an honest video on MSG in BBQ. Granted MSG works best when it’s complimented by other natural flavors that lift our taste bud sensors. Excellent video Joe, deserves to get more views than tallow!

    You got some lucky neighbors being able to be taste testers for your BBQ. I remember when MSG was said to be bad for you. Chinese places would offer meals with or without MSG. I tried the non MSG versions of my favorites and they tasted off. Always ordered with MSG since. Nice video, thanks!

    Yep ... I use MSG alot. Don't tell anyone & miraculously no one has any adverse effects. My ratio for something like brisket is 1 part each of Lowry's/garlic salt/MSG/granulated garlic. I come over the top, separately with 16 mesh pepper (pepper first per Jirby).

    I don’t use MSG on everything, but I do use it. It does enhance flavours. Last time I used it was very sparingly trying to make marmalade and it did not work well for me. You try stuff and sometimes it does not work.

    My mom told me a story, about my uncle Roberto who always had a plastic bag of white powder that he would sprinkle over his taco meat at his taco stand in Mexico. She was 6 at the time and remembers hearing people assuming it was some sort of drug like cocaine. Later when my mom was in her 20s she found out it was MSG. Great video Joe, you always get good ideas ahead of the curve. 👍👍

    Awesome video, Joe! MSG gets a bad wrap. I tried a steak experiment with SPG on one and MSG and SPG on the other. There really was no comparison. The MSG steak had so much more flavor.

    My man first and foremost great trim job and I use MSG in my comp brisket but I never tried on a Texas style brisket. Now I will. Thanks for the brisket experiment.

    I am firmly on team msg. It is actually a nice way to reduce the sodium content in food. My favorite surprise use of msg is on cottage cheese. A true game changer.

    There is a product that was, and is in many kitchen cupboards in North America, called Accent. That is just MSG (monosodium glutamate). I believe MSG was invented in Japan, in the early part of the last century. It is derived from seaweed, which contains it. Foods like tomatoes, parmesan cheese, shiitake mushrooms, and other foods that we consume also have naturally occurring glutimates in them, which makes them taste so good. Umami is one of the other taste sensations that we have, besides salty, sweet, sour and bitter. Those briskets look really amazing. Your neighbours have excellent taste in barbecue.       It's people that are not educated on MSG. I did a ton of reading prior to this and the history of MSG is pretty cool. All because 1 man thought he had a reaction to it. 👍

"MSG symptom complex" is real (according to the Mayo Clinic) and I have experienced it (got a first hand EDUCATION, not from reading a bunch of books)and it was not fun. I had every symptom listed on the Mayo Clinic website. So to claim only the uneducated THINK they have a reaction to MSC is total BS! Statistics show that I am NOT THE ONLY ONE. And why does the FDA require any product with added MSG to have it listed on the label? Go ahead and use all the MSG you want, but you really should tell people who eat your food. Until you have a reaction, you will NEVER understand.
      Let the bashing begin !!!

    I have been using msg for years. I never thought of it as harmful in moderation. I sprinkle it on everything.
    Try it on popcorn with a touch of garlic, you will be amazed.

    If you were to add it to your SPG rub you posted with Lawry’s, would you dial back the salt? Like 2 parts pepper, .75 parts salt, .25 of garlic and lawry, and .25 msg? Or add it in addition to the ratio, and if so how many parts would you do msg? Thanks for the video! Thinking msg would be an awesome add to a lot of my rubs for chicken and beef, and maybe in sausages

    This is why I put shiitake mushroom powder in my brisket rub. It brings out that umami flavor like the msg is designed to do.

    Seems like I’ve been using MSG a little to light after your explanation. Thank you!! I’ve noticed a huge difference in Sous Vide Steaks with MSG, really brings out the beefy flavor IMO. Grilled steaks with MSG are still noticeably better vs no MSG, but not as drastic as Sous Vide MSG vs no MSG.

    LOL the look on your neighbors face when you said you want to know what the difference in brisket A was 🤣. It's MSG don't worry 🤣🤣🤣. Great video Scotts BBQ in SC , he calls MSG Jesus tears and uses it on his whole hog BBQ. His cookbook has a seasoning blend recipe.

    A friend sold his burger joint several years back and gave me the rub recipe when he left...one of the ingredients was msg. I use it for so much more now.

      That's false. MSG occurs naturally in many things. There may be a few people who actually can't have it, but *most* people would never know the difference.

      Yo G Rich! I don't know of anyone personally that can't have it but I have heard that some folks can't eat it. This has been a secret ingredient in Chinese food for decades now.       @@SmokinJoesPitBBQ When I was in my 20's MSG and I did not get along well. Eating it gave me a mild hot and prickly sensation on the back of my neck. Made me selective about Chinese restaurants in particular. I no longer have any reaction to MSG. My wife and I love peppers, but she has a nasty allergic reaction to serranos. No other varieties. Go figure.

    Joe, MSG makes it impossible for me to sleep after I eat it. I don't have any other adverse reactions, just that I can't get my mind to quiet. Thus I avoid it at all costs. But a great video.       @@jaylancaster5419 I don't eat fast food. I haven't in years. Every once in a while I will get it from a restaurant but I am pretty careful. I'm really not sensitive to any food other than that. Like I said, I just won't be able to sleep.

      @@SmokinJoesPitBBQ It seems to be just the raw form, as it is highly concentrated. I definitely eat those other things, but they aren't main contributors to my diet. A lot of meat and leafy greens.

    Wassup Joe , don’t know if you remember in a Live video But I was asking about marinating a Brisket overnight in the Fridge . I see you done that in this video . What did you store it in or how how did you store it ? Mines didn’t turn out well marinating it in the Fridge overnight 🤷🏽‍♂️

    The seasoned salt is adding more actual salt in addition to the salt in your rub. The MSG is a flavor enhancer, so whatever you are using will have a more potent tastes.

      He never answered this but I personally wouldn't. MSG doesn't taste salty at all, it's completely different
