यह पानी और तेल यानि की liquid के surface tension और viscosity के property पर आधारित है।
विज्ञान के अनुसार temperature बढ़ने से surface tension और viscosity दोनों कम होती है।
ज्यादा Surface tension मतलब ज्यादा hydrogen bond,यानी same molecule आपने आप को जकड कर रखे हैं,ज्यादा viscosity मतलब liquid गाढ़ा है।
अब समझते हैं तेल की surface tension और viscosity ,जो की higher temperature यानि 100 ℃ -140℃ या अधिक में कम हो जाती है,अर्थात hydrogen bond ढीले होते हैं,और तरलता ज्यादा होती है।
वन्ही पानी का surface tension और viscosity 25℃ -30℃ जोकि 120℃ के खौलते तेल से ज़्यादा है।यानी hydrogen bond पास पास है,और तरलता कम है।
यह दोंनो liquids के surface tension और viscosity में difference ही सारे खेल की असल जड़ है।
तेल की suface tension और viscosity कम होने के कारण,हाथ में लगे पानी के लेयर के ऊपर ही रह जाता है,और जो चंद second का अंतराल है,उसमे हाथ बाहर निकालने पर वह तुरंत वाष्पीकृत हो जाती है।
उस व्यक्ति को तेल में हाथ डालने से पहले पानी से हाथ धोना परम आवश्यक है।यही main और important thing है,दूसरे वह कुछ पलों तक ही यह कर सकता है,अगर थोड़ा भी समय ज्यादा हुआ तो इसका भी हाथ जल जाएगा।
क्योंकि तेल के साथ अगर पानी भी वाष्प बन गया तो ,हाथ जलना निश्चित है,किसीका भी।
तीन महत्वपूर्ण बातें:
1.हाथ गीला रहना जरूरी है।
2.समय का क्षण भर का हिस्सा ।
3.पानी और तेल का different temperature, surface tension और viscosity
अतः अगर कोई सूखे हाथ डालेगा तो जल जायेगा।
नोट:यह व्यक्ति सधा हुआ है,अर्थांत इसका reflex action तेज़ है,अतयः बाकी लोगों से तेज़ और दक्ष तरीके से कार्य करता है।अतः नौसिखिये इसे न आजमाए।

और तेल का boiling temperature भी fixed रहता है,अलग अलग तेल का अलग boiling point रहता है।
यहाँ में aasume करता हूँ की 100℃ से ज़्यादा होगा ,या मनो लो 160℃ होगा।
160 - 30 =130℃
अतः जितना तापान्तर होगा उतना ही surface tension और viscosity में अंतर होगा।
लेकिन अगर तेल का अत्यधिक तापान्तर भी उचित नहीं यानी की500℃ आसपास।
उसमे भी जलने की सम्भावना ज़्यादा रहेगी।
इसलिए optimum डिफरेंस चाहिए।

द्विवेदी जी यह एक फिजिक्स का एक नियम है और कुछ नहीं, दरअसल खोलते तेल में हाथ डालने से पहले ठन्डे पानी में हाथ डाल कर एक ठन्डे पानी की परत हाथ पर आ जाती है , उसके बाद गर्म तेल में हाथ डालने पर तेल पहले हाथ पर लगे पानी को गर्म करता है उसके बाद खाल को जलाना चालू करेगा,
और यह प्रक्रिया बहुत क्षणिक होती है। अगर किसी बाबा का आशीर्वाद है तो 1 मिनिट हाथ डाल कर रखो। लल्लनटॉप कृपया अंधविश्वास न फैलाये

Before he put his hand in oil he put some water(2:34) in his hand so the water is working as a protective layer between skin band oil for some time.. it's just science.

This is Leidenfrost effect, when hot boiling oil comes in contact with the layer of water molecules (on the hand), layer of water molecules get evaporated and form vapours between hand and oil surface, these vapours act as barrier to the transport of heat from the hot oil to the hand of that person. Off course this heat barrier last for very small instant of time, so the action shown by this person required to be quick.

All pakoras contain lots of water. Water is more volatile than oil its latent heat capacity, and fusion heat is high its density is higher so the temperature of oil drops to 100 degrees centigrade. The burning capacity of 100 degree water is 3 times more than oil at 100 degrees. That is you can put your hand in it for much longer duration.
The Secret is:-> At 2:26 , he washed/ wetted his hands...
There's a phenomenon called leidenfrost effect... If we firstly dip or wash our hands in water and suddenly dip them in oil or any hot thing **for a very short interval of time** , the water on our hand gets coverted into steam immediately and this steam acts as thermal insulator between our hands and oil, thus no damage happens...
