    OMG OMG OMG Jeremy! I, incredibly adventurous cook that I am , was introduced to you by my “ hunka, hunka, burning love” . At 71 , I moved from Wrangell , AK to New Mexico . Yep, I learned how to a number of Hispanic dishes. ( Award winning tamales for gringos) BUT life is a heck of a lot more diverse ... so, when Himself said ‘ you maybe outta try your hand at this...’. He bought me a wok ... jumped on your website, fell in love ... the rest is history 🥴. Just so you know, using a wok is a hell of a lot harder than using a commal or a cast iron fry pan, but a heck of a lot faster 😁. Still trying not to over cook, have to make substitutions ( who ever heard of dried shrimp ?!?) but Thank God we do have a wonderful little shop called Aiko who has been very patient with me 🥴. I wish all at your school the blessings of the Lord. Protection for your family, children and the May your angels keep you from this DAMN covid crap!

    Does wok pan work as well on induction stove? Wondering since I might soon have to switch from gas to induction and have no experience on induction. If there are any differences or tips anyone has, I would be eager to hear them.

    It was excellent. Thank you for sharing. I did not have beer so I used sparkling rosé. I added 2 birds eye chilies for some heat. Excellent.
    Did NOT do this blindfolded.😁😷

      It wouldn't be the same, as the sauce will have other ingredients in it. But you can always add the black bean sauce into the stir fry sauce that was made in the video! - Lee

      Hi. I did see a tin of fermented black beans in a Chinese supermarket, if i purchased a tin, once opened how long would the remainder last?. Not allowed out with this virus at the moment.

    I had Black Bean Chicken on Long Island NY years ago & loved it. I thought the beans were chocolate, they were sweet & could pass for a desert. The waiter said, no chocolate in it, so I had to trust him on that.

      Ín Britain it is known as corn flour.
      In North America it is corn starch.

    Very entertaining and informative. Remember if cooking blindfold, remove glasses first! They really don't help and remember to pop off the cap on the oil bottle! Great fun. 😎

    Big fan here and subscribed. I’d like to know if Jeremy uses a 12” or 14” wok since I’m in the market for one. It seems the 14” have the helper handle, and 12” don’t. BTW, I had been setting up my stir fry ingredients on a plate, but saw Jeremy doing this, calling it a wok clock.......lol.

    I had a spicy chicken dish with only chicken and onion, it was a brown sauce, it was a Cantonese restaurant. Any idea of the ingredients? Black bean or oyster sauce? With chili paste? Any hint would help. It was very saucy

    I live in Denmark, and some of the ingredients are hard to find here..
    The light soy sauce you guys use alot, what's the difference on that and dark soy sauce?
    What i can find in the stores here are Thin Soy Sauce and Soy Sauce..
    And the five spice can you make a guide on how to make that or is it something you purchase?

      Dark soy sauce is thicker and more caramelized than light soy sauce! Five-spice is a spice blend that you can purchase - Lee

      School of Wok Hi Lee. It was the sweet and sticky chines hoisin cola ribs but without the cola. Taste was really nice but I found that they need to be marinated for a while before cooking because the flavour wasn’t drawn into the pork enough

I cannot named the dish, neither can I named the product used but it was like a cured bean curd paste from a jar or tin used to flavour the dish. It had a strong taste but it was delicious. Do you know what I am talking about? I always wanting to taste that dish again but was too little to remember.😂😂😂😂

    Great lesson here. You may not realize it but you use multiple senses when cooking. If I can't hear what I'm cooking it throws me off.
