I'm from Ilocos sur so kinilaw or kilawen is an Ilokano dish from up north like Ilocos Sur and Ilocos Norte where I'm from we usually use goat or cow and some other little fishes and big fishes. We eat it raw with vinegar, ginger, onion and salt and if you like put some sili in Ilokano or chili pepper or jalapeño and mango too like Bella said and one more is called papait, I'm not going to explain it but it your from Ilocos Sur you know you know lol.
