Thy didn’t drop the ‘e’. It is generally pronounced ‘Johns-tun’ in Scotland. It is generally taken to come from ‘John’s town’. Tun, toon meaning town. As many people could not write; it came down to how it was written down by others on birth, wedding, death certificates etc. and both forms were used. In most family histories you will find both spellings appear. They are pretty interchangeable over the years - but both represent the same proud clan.
