The "spirit of a racing game" is to cross the finish line first. Doesn't matter how you do it, be it bagging, front running, or releasing A for a second to get an extra trick.
It’s also meant to go fast and not completely fucking stop. Bagging is without a doubt the dumbest thing I’ve ever seen!

trackmania has so many tracks were you have to go slower to make cuts corners or actually just less airtime to get more acceleration later.
and trackmania has a much higher cap in terms of speed.

Oh my gosh! I only know about the Ice Ice Outpost one because the offical Mario Kart 8 strategy guide says it's intentionally done that way.
One of the biggest points of racing as a whole is learning the optimal timing and amount of braking you need to apply to maximize your cornering ability and to balance the weight on your vehicle. Mario Kart and only a few other arcade racers are basically the exception where you never need to slow down. But on 200cc it’s very effective to learn how to brake drift to turn better.

You could also mention that on some tracks, like New York Minute and Peach Gardens, in shroomless shortcats you may need to release the mini-turbo early so you don't lose speed in the grass.

Excitebike Arena is a perfect example of this gimmick. Online, you will have to slow down in the air a lot if you want to get some kusaan slides and extra tricks
During the early 2010's F1 introduced KERS to its cars, allowing the energy stored during breaking to be used to give extra power to the cars. But there were designates zones in which KERS could be used, and only for overtakes. So in a situation in which 2 drivers were battling for position, they would each purposefully try to slow down before the zone, just so they could use KERS during their battle. Just one of the many examples of purposefully slowing down to gain an advantage in professional racing.
If slowing down isn't in the spirit of a racing game then it's on Nintendo to design a racing game where that isn't the best strategy.

the last part is hilarious because what matters in a race is getting to the end faster, which results in a higher average speed compared to everyone else, although a lower instantaneous speed in specific segments

They're not significantly faster, probably less than 0.5 seconds. But they're really easy and these boosts add up!

Yeah a mini-turbo trick on the gear is faster than this! but since it's not on a turn, most players will find that difficult to do, and will likely fall off or take a bad line. Same with choco mountain. I tested it and the slow down method is nearly just as fast, but WAY easier
Used something similar in the original mario kart game, on the dirt map with the bumps. Always won me the game.

Funny thing is that often in actual racing people slow down to get a better exit of the corner so you sacrifice time in the corner for better speed on the straight ofter the corner.
