Hard to explain in TH-cam cuz its pretty straightforward but it has some little rules here and there. As the other guy said: if it bounces on the playfield twice after they hit it they earn a point. If somebody hits it and then bounces out of the playfield then the others win a point. The main thing is hitting the walk in front without hitting the floor first. You cant hit the wall in front right on the line at the bottom or bellow it.
Jai-Alai is a cool sport to watch. When I was 14 my Mom had a business trip to Tampa Florida. Dad and I went with her. We went to watch a Jai-Alai match and at 14 I was allowed to get on the match. Crazy but fun!

You can't really compare speeds generated by whatever they have with speed of the ball hit by a racket (highest recorded speed of the ball in squash is like +170mph just for comparison). But what's really more important than ball speed is the stroke frequency which is also considerably higher in squash which makes it much more dynamic.
