Kulfi and namkeen I feel is much better in Jaipur than any other options. And one more you missed that was Rawat k piyaz kachori.

I think more chicken is smaller in size ,it's more delicious....same with mutton pieces small size pieces are better in taste .... Age of chicken and mutton matters a lot
You can also try Resturant like TAXI CHICK-INN (murg malai tikka) , don’t miss chowkhi dhaani for authentic rajasthani food and the experience . Also try Spice Court , Kebab’s and Curries , Talk of the town (chicken kaali mirch must try)
