The sushi/ sashimi is beautifully presented, like a work of art with meticulous precision. Enhanced by the appropriate sauce concoction, and u have these mouth watering dainty fish delicacies. I can see u guys are veterans in this category of Japanese cuisine. Its a joy watching u savouring every piece of fish that landed in ur mouth. I'm not into raw food but this is an enlightening piece for me. I enjoy rhe food, virtually 😂
Probably the restaurants are not Japanese own. Majority of so-called Japanese restaurant are owned by Koreans and Chinese. I called them chop-suey Japanese.
Kaji and Kaiseki Yu-Zen at Japan Cultural Centre are the only 2 authentic Japanese omasaka restaurants operated by Japanese that have been open for 20 yrs or longer. In effect, Kaji is the best in Canada before those fusion or choy suey Chinese and Korean owned Japanese restaurants existed. Even your post of those places to buy Japanese raw fish, most shops are owned by Chinese and Korean. It is not about the price as you seem to think the higher price is the better ones, which is absolutely WRONG. I would suggest you before you post any Japanese restaurant check whether they are authentically own by Japanese before you refer. This one is the best as I trust the source of where fish come from. The owner did not raise their prices much. It was the same prices 10 years ago. It is still the best in Toronto quality and prices.
I think you misunderstood my meaning about the pricing. I also don't think Japanese owners are a must to have authentic Japanese cuisines if the chefs know what they are doing. I review restaurants based on the food quality and culinary skills but not the chefs nationality. Kaji is for sure one of the established and reputable Japanese restaurants in town for many years, but there have been down times and many other good places have popped up recently. I appreciate their omakase price remained rather low but still serving quality food.

唔知道點解,在我住的地方食omakase 冇煮物前菜,又冇甜品食,最多係食甜蝦時,師傅會將蝦頭炸脆俾你食囉!

係呀!有一間老字號的,疫情前晚晚幾乎滿座,好多日本人從日本過來食㗎!
老闆未退休時,都係坐低,任佢俾乜食乜,不過Shima Aji就會用火槍燒一下才上…之類咁喇
