Personal shields were developed to counter projectile and laser weapons so there was a return to knives and swords as a slowly moved blade could penetrate the shield. There is also a convention that any house using atomics or larger weapons to kill would be destroyed by the combined other houses. It was so unsafe harvesting the spice because the least movement on the open desert attracted a worm. I am not sure what part of the worms and the suits felt goofy to you, the stillsuits reclaim body moisture and the worms are part of the ecosystem of the planet.
There's a lot of backstory that helps going into the movie. Including the Butlerian Jihad. Intelligent machines revolted in the past so they outlawed them and Ai for interstellar navigation, which is why spice is needed for that and an array of other things.
We are aware of the Bulterian Jihad to some degree. However, we don't know much about the tech and the politics and such. We are generally watching Dune as is. Probably going to read the book now though because the world-building feels excellent!
Spice harvesting seems pretty logical to me. Send out your harvester with one or two single man spotter aircraft. Call in your escape carrier when worm inevitably comes, get out. Two factors are governing this process. 1. Limited Atreides resources, we are told they are few in number, not rich like the Harkonnens, and they don't have their own spice mining technology. Unlike the Harkonnens. In these conditions they are struggling to squeeze out all the production they can. 2. They're being both directly sabotaged and set up to fail with too few resources, men, and production expectations. So each harvester doesn't have a proprietary escape carrier because only a small fraction of harvesters need to be moved at any given moment. Furthermore, the lords of Dune have little care for their serfs or peasants. These are feudal fiefs. Atreides honour is rare, and their values are difficult to institute. So they're left trying to maximise efficiency at the cost of other values.
We were thinking that the biggest gains in output would come from optimizing operational competence at this point. Losing a whole harvester seems like a massive blow.

So the combat in Dune is a combination of technology, social conventions, and the worms? That makes sense!
