    Delicious. With a cuppa rosy unbeatable. I used whole meal flour. Gives them a little more crunch. Oh and the chef’s wonderful London accent. Love it. Thank you.

    Sir! I tried your rock cake recipe today, and I let them stayed for the 20minutes, and they came out really good. The next time I bake them, God’s will be done. I plan to bake them for 15 minutes since I’ll be using my conventional oven again , that gets hotter faster.🙏🏽❤️😇. God bless you and your family 👍🏾

    I have always used SR flour and baking powder. I sometimes make the dough softer than it should be so that it spreads more and has a softer texture. My brother in law loves them whatever way they come so I have to make a lot of them.

    My family's made a variation on these for years as a brunch item. We use blackcurrants or raisins instead of mixed fruit, otherwise it's the same basic ingredients. They are good.

    Interesting method a lot of recipes mix the sugar and butter together. Looks great i dont have mixed spice so i will use nutmeg and cinnamon.

    I just made your rock cakes and I’m waiting on the oven just to get hot. Looking forward to trying these are used to eat them a lot as a kid my grandma used to make them all the time. However I’m living in Canada now and it took me a bit of an effort to get the mixed spice I had to go to a spice store and get them to mix it up for me. Also I made them like Canadian cakes so they’re super big I only got six out of my mix not nine like you did. I also had to add two more table spoonfuls of milk to try and get my mix like yours mine was still very dry after an egg and 2 tablespoons maybe the flour is a little different here I don’t know.

    Nice recipe and they look delicious. Hopefully you got rid of the bug that was crawling around inside the baking powder at 1:20 - 2:40 before baking.

    I love rock cakes. I used to make them for my kids but they would never eat them and I would end up eating all of them. I guess they would probably freeze quite well.

      That was probably some of the baking powder,you always get a few bits that don't sift.Just rub a spoon over them and they go through the sieve.i have used this recipe and it is just like My Mum's was.Spot on.

    What's the difference between this and a scone? Also if I soaked the fruit in a little orange juice or Scotch or brandy then added the juice, whisky or brandy would that work?

      Scones are very similar. Traditionally scones use less fat, less sugar or no sugar, more milk and no eggs or spices. However, there are no hard and fast rules and people make scones and rock cakes all sorts of ways these days. I guess a rock cake is a bit sweeter and more cake like. It tends to have a rougher appearance because the dough is softer and gets spooned onto the baking tray instead of rolled and cut.
