I like that you said that was how YOU ate it and not how it should ALWAYS be eaten, because everyone has their own ways. I too like to put lime, bean sprouts, and basil in the pho. I use fish oil sauce instead of hoisin sauce but to each their own! Pho is for the soul and everyone's soul and preference is different :)

Yup, its the same concept as cilantro, you have to break in smaller pieces so it doesn't get stuck in your throat, also you want to cook down the bean sprouts properly. Also don't put the hosin or sriracha into the bowl directly, grab a side sauce bowl and just bite your meat with each spoonful bite..enjoy yall

I like putting hoisin and sriracha into my bowl directly. But I also like having some on the side to dip. Also, I love dipping my BBQ pork Bahn Mi into it. Just thinking about that makes me salivate.

I add Thai basil, cilantro, and lime. Then I have about a quarter of the broth. After that I add the chili sauce and Hoisin sauce.
