I'm doing your recipe for 1/2 of it and also am doing the other half with a basting mixture of honey, ginger, little bit of black pepper, and a little bit of cayenne pepper. Looking forwards to it! I used to make fruit jerky and always found a pre-drying of the outer most layer ended with me ruining the fruit because it never got dry and smoky all the way through! I'm glad you included that tip about the opposite being true with these fish, little bits of experience you can pass on so that we don't gotta learn the old fashioned way. Lol
Wow that is so so good. I have made it in my smoker before. But I have removed the skin and hung long cut pieces on rack using tooth picks. Love your idea of leaving the skin on. So, I guess that you descale the whole fish first?
A week max, or vacuum seal and freeze it. It’s not dehydrated far enough with this recipe. You could go further with dehydration to make it similar to a salmon jerky.
There’s a video about the smoker on our channel. The brine is 50/50 sugar and salt. The amount of brine you need depends on the amount of fish you are brining.
Love my cutthroat trout candy!! Haha nice recipe. I throw garlic powder with my brine. And glaze with raw honey. Gotta try the syrup glaze now.haha your wife didnt look to convinced. Or is that cause she realized the skin was on it?? Lol
It is not candied because you add sugar to it. Real Candied salmon is cold smoked. They call it candied because when you cold smoke it it looks like candy.

Turned out great. Everyone loved it! Both recipes were great (maple syrup/garlic and honey/ginger/cayenne).

The fish dosen t get salter the longer its in the brine . The salt consentration is what it is!
I have notived it absorbs the salt deeper into the protein longer it sits.

You can but the meat will fall apart very easily so be careful when handling it after it is smoked.
