My guess for the 90 degree turns is limitations of the game engine with map size, at least when the map was made (I'm pretty sure there are larger maps in the final main game) I think someone else's assumption was right, this was originally a beta that found its way in as an Easter egg.
this game was for kids when your team mate get shot down they are not dead they just land on the death star and they say I'm clear but my fighter is down. But it's horrible they are in space. and the death star is about to explode. it would be horrible to know that you will die like this

The three extra missions weren't meant to be part of the main storyline of the game, so that's why they look so "beta" with barely any cutscenes and portraying movie events in such an inaccurate fashion. They were more like "challenge scenarios" that test all your skills acquired throughout the game. "Beggar's Canyon" tested your maneuverability skills in narrow spaces. "Death Star Trench Run", your ability to dodge heavy enemy fire. And "Battle of Hoth", your AT-AT tangling skills.
I used the secret N-1 Naboo Starfighter on the N64 version. If you finish Beggar's Canyon , DeathStar Trench Run and Battle Of Hoth all with GOLD medals you unlock most if not ALL the ships for play in the normal missions (Use DEADDACK cheat to do this at the start at the game). To get the N-1 NS you need to enter 2 different codes to use it.
I have tried that and what happens is they say, "His computer is off. Luke you switched off your targeting computer. What's the matter?" And then you fail the mission. That's BS!!
Since after 4 variations of the Trench Run on Super Star Wars, X-Wing, Rebel Assault, and Star Wars Arcade, where the trench is always straight, LucasArts game designers decided to take "artistic liberties" with the scenario.
And I just realized why it has 90 degree turns. Factor 5 had to design these missions inside an enclosed arena (you can't fly away; your fighter is always forced back into the same area in other missions), presumably dealing with the N64's limitations at the time. A straight trench would break that design.

I think you can. It's certainly possible to do it by doubletapping the torpedo button, thus free-aimng.
