At Osteria Boccondivino, just a couple of hundred metres from where you're standing, I've had it served as part of an antipasto. Really nice. And, as you imply, quite unusual as sausages go.
I don't think bacteria get time to grow. The meat is cut from fresh carcasses, minced and cased very quickly. It's only meat that's been exposed to the elements (and bacteria) that is dangerous. (That's why you can eat a very rare steak safely as long as the outside is seared to sterilise it.)

Usually hung and cured for some months. she buys the recently prepared sausages from our lcoal butcher (who also rear and salaughter their own animals) then proceeds to remove the meat from the casing and consume it. She says "the fresher, the better". For me as a British ex-pat, I have to at least let mine cure for a few weeks, but each to their own! These look divine. Maybe there is a market here in Catalunya for something similar using senglar (wild boar)...? Interesting..... ciao! x
Here in Brazil we haver a kind of sausage called "Linguiça Blumenau", named after the city of Blumenau in Santa Catarina. It was created by German immigrants and is pork-based, but also VERY soft. It is usually eaten spread on a piece of bread, like the one on the video.
Unfortunately the butcher shop had a very strong pink light in their workshop and that impacted the filming. I did my best with the coloring. Thank you for watching!
I'm an adventurous eater. I've tried all sorts of unusual foods, raw beef and bugs of all sorts. But raw pork? And raw lamb casings? I'm sure it tastes good... but... the risk. A wasp omen?
You can do simple things if you have good ingredients and the knowledge to get the best out of them. Alas, if these are blend, then you'll need lots of extra things added 😢

This is just WRONG, raw pork! Pigs are the most intelligent animals on earth cows are much the same they should be shown more respect. Not to mention that these sausages would go rotten in no time.

We have something somewhat similar in Germany, Mettwurst. It's also a raw sausage, but made from beef or pork, so it is rather fatty.

Mettwurst is not completely raw though, despite its name referring to Mett, which usually is.

Why on earth is veal still legal? The cruelty alone should have stopped people making this ages ago.
I know that very cruel practices have been used here in the US, but I'm not sure that's true in Italy.
The contrast is as underdone on this video as that meat is. Everything looks mushy.
