The reason everything is so glitchy is because the replays of your crash scenarios are recorded in real-time and if you slow it down, the soft-body physics still updates at the same rate as real-time (I.E. if you record at 60 FPS and then slow it down, the physics will only update every 0.16 seconds). As for the T-Series at 6:02, that's because the origin point of the vehicle is actually the chassis so technically the cab and body paneling is updated relative to the chassis that goes flying off into the distance, resulting in that weird bouncing behavior.
