How to make CRUNCHY Pickled Mustard Greens (Jruk Spey) | វិធីធ្វើជ្រក់ស្ពៃឬស្ពៃជូស្រួយៗ

  • My quick and easy way to make pickled mustard greens. No drying, no soaking involve and still has that same great taste and crunch.

    Ingredients
    3.5 lbs of mustard greens | ស្ពៃ ៣.5 ផោន
    3 tablespoons Kosher salt |អំបិល ៣ ស្លាបព្រាបាយ
    2 tablespoons un-cook jasmine rice |អង្ករ ២ ស្លាបព្រាបាយ
    15 cups of water which is around 7.5 pint | ទឹកសុទ្ធ ៣.5 លិត្រ
    You will also need a glass jar | ក្រឡអំបែង

    Thank you for sharing your recipe. I noticed some people use sugar as one of the ingredients to make this kind of pickle. My mom make them exactly the way you make them.

    I did not know anything about green masters before. I had a opportunity to have pickled green mastered with vitamins family. It was delicious. I was looking for it’s recipe. I found your video. I definitely will make it pre soon . Thanks a lot

      It's a good emergency food because you make it a big batch and it last a long time. Easy to take it for and prepare quick meals when you don't have much time.

    Can use glutinous rice to replace the rice?

      I have not tried it but I think you can, you might have to use less as sweet rice has a higher sugar content.

    I have a suggestion, after you add water and it be cold add some chopped garlic in to the jar . I am sure it will enhance taste very much.

      When we eat as a relish we chop them into small pieces and then add a little bit of sugar to balance them out. Also we add chopped garlic before we eat. The garlic is still fresh and fragrant.

    Hi, why need to use rice or can omit it?

      The rice has carbohydrates which helps with the fermentation process. If you leave it out, it will not take the same. It will just be very salty but not that pickle sour/salty taste.

      You actually don't need rice. I make mine without rice and it still turns out sour and crunchy. The key to make it crunchy is to wait for the water to cool down to lukewarm so it doesn't cook it.

    I made this but it doesn’t get sour? It’s just salty. Does it turn sour by itself?

      Hot Payday Loans after you make it you have to leave it in a warm place or at room temperature so that it has time to ferment (pickle). It takes a few days depending on the temperature. After 2-3 days you can do a taste test to see if it is sour enough to your liking. Then transfer to the fridge to stop the pickling process.

      I left it out in the backyard where there is sunlight for 3 days and it still didn’t get sour. I must be doing something wrong

      Hot Payday Loans sometime if it is not salty it turns bad (mold) really fast. Also did you use rice grain and boil it with the water? The carbs from the rice helps ferment it.

    hi I love your videos. Should I store the jar indoors or outdoors while it's pickling?

      While pickling you can store it indoor at room temperature. After a couple day taste it and if it's sour enough to your liking then transfer it to the fridge, otherwise you can leave it out to pickle a couple more days.

      +Stacie Bambi indoors or outdoor does not matter as much as the temperature. The hotter or warmer the temperature the faster it pickle. For example if I were to make this in the winter I would put it in a warm spot outdoor. But in this video I just put it on my counter at room temperature.

      neangkolapsaw as long as it's uncooked rice it should be fine. The rice is a carbohydrates that helps with the fermentation.

    Cambodians call it 'jruk' for pickle? Hahaha! In Malaysia (Malay language, bahasa Melayu), we call it 'jeruk' which means pickle too. So, pickled mustard green in Malay is 'jeruk sawi'. Sawi is mustard green. In Indonesia, however, 'jeruk' means lime although their language (bahasa Indonesia) is also a standard register of Malay language.

      It sounds very similar then 😂 another word that I find similar to other languages is “kuy tiew” which means ‘noodle’ in Cambodian so for example ‘cha’ means ‘to fry’ together ‘cha kuy tiew’ means stir fry noodle.
