和食の修行をしてきたという若い店長さんは、全てにおいて「火を入れすぎる」事がない。グラグラ煮立った鍋なんて、ひとつもない。素材と基礎調味料の活かし方を心得ている。これは絶対に旨い。この食堂は大当たりだ。日頃こちらへ通える方々がうらやましい。
