  • We check out third wave coffee shop Bear Pond Esperesso in Tokyo's Shimokitazawa neighborhood.
    Bear Pond Espresso is the brainchild of Katsuyuki Tanaka, a barista-extraordinaire and Tokyo local. Tanaka spent the majority of his adult life in New York, where he witnessed the rise of the city’s coffee culture in the East and West Village neighborhoods firsthand. After working his way up the ladder and conquering the city’s coffee scene, Tanaka was struck with the inspiration to take all he’d learned back to Japan. It was there that he opened his store, located in Tokyo’s Shimokitazawa neighborhood.

    In my opinion, it's not just a lot of his lifetime that he invests, it's primarily a lot of beans. If you think about the fact that he uses about 500g to 1kg of beans a day for "adjustment", you shouldn't think about how much Time the coffee farmers work for it. Even if the Angel Stain is outstanding, one should ask oneself whether a good ristretto can't also be enjoyed without this enormous waste.Sustainable is different, but necessary!

      Interesting take! I am doing some research into the Japanese coffee scene and another legendary coffeemaker/shōkunin comes to mind: Katsuji Daibo. Certainly, an entirely different character and process of coffee-making, but he's said to have picked out any fresh beans with some sort of deformity or stain that would not result in the so-called "perfect" cup of coffee. While we don't have all the information as to what happens to those beans, it's still sad to see them go (especially considering what a cup of coffee goes for in Japanese kissaten).

      Exactly I think he's kinda showboating like christiano Ronaldo for example. How good does it really taste and would there be a difference if he wouldn't use 1 kg of beans for dialing in? Seems kinda inefficient
