Idk about the last part, but there's a lot more new things on this map. For example in the main ship you can activate certain pipes, so when you run through certain halls, slowing steam will activate on a killer behind you. And there's also a bunch of secrets too

You can sabotage a hook. It will respawn eventually (depending on which method you use to break it). You can use Toolboxes, or you can use perks such as Sabotage and Breakdown.
