    I tried this recipe today and it's pretty good, but it was only for a single 8 inch pan

      Oh do you mean that you just used a deep 8 inch pan and then cut the cake into two separate layers? If so that would work too, though the baking time would need to be adjusted I should think.

      @@starlsma2000 Well that is strange, as you can see from my video that the amount of batter the recipe makes is enough for two cake tins. The ratio of butter to sugar, eggs and flour is the traditional one for Victoria Sponge. As you can see in my video the batter, when levelled, only half-fills each cake tin and as it bakes it rises to completely fill the tin.

    Great, thank you! Is the tin/form a 20 cm wide one? Does it matter which material it is?

      Yes they are 20cm/8 inch sandwich tins, and aluminium, or at least metal tins are best.

      Hi Sue, it can be so irritating when things don't work out. The problem with baking is that so many things can affect how it turns out, undermixing, overmixing, wrong temperature, opening the oven during baking etc. But this recipe is very simple and has always worked well for me.

    Thank you so much Geoff for the conversion measurements, it is such a great help and time saver when baking. Your recipes are awesome and your a pleasure to watch. I made your Christmas pudding which was scrumptious and was wondering if you can show additional pudding recipes so I don't just use my mold at Christmas. Here in the States we aren't very familiar with steamed puddings and I would love to learn.

I I have a couple of other ideas too. So will see what I can do.

    All-in-one method is definitely better for Victoria Sponge because with this method it produces a much flatter cake than one made with the creaming-butter-and-sugar method.

      HI Pat. It doesn't matter in what sequence the ingredients go into the bowl, it is the 'all in one method', so everything in the bowl and mix together.

      HI 4k Photography. Yes. I like to weigh the empty bowl before I start a recipe. So then I weigh it again with the batter in. The difference between the two gives me the weight of the batter which I can then divide equally into the pans.

      Hi LL. Assuming you used self-raising flour(not plain flour), and baking powder the cake should rise well. If you used plain or all-purpose flour you need to add more baking powder since self-raising flour already has some added. To turn plain flour into self-raising flour I usually add 2 tsp per 150g. So for 225g I would add 3 tsp of baking powder. That is in addition to what the recipe already calls for. However if you did use self-raising flour and baking powder as per the recipe, and the correct amount of eggs the only other thing is that maybe you used a larger diameter cake tin. I used 8 inch/20cm. A 9 inch/23cm cake pan would work well, but the cakes would not be so thick.. For the same thickness in 9 inch pans the recipe would need to be increased by 25%, and the cakes would need to bake for a little longer too.

      Hi Christine, yes I can remember exactly where I bought it. But it was about 30 years ago and it was from Marks & Spencer. I had 3 ceramic storage jars with the same pattern on as well, though they are long gone.

      I was liking the Kitchenaid mixer - with a proper slow speed ! I've had to make a speed controller for mine so it'll run slow enough !
      Interesting that a few recipes use double the mix quantity and use 8" tins while I use half as much in 7" tins !

      HI Zoe, are you doing the all-in-one method? If not, try it. Remember not to mix too much. Just mix everything until all is combined. The other thing is not to open the oven until you can see the cake beginning to pull away from the sides, or the middle may sink, if not fully cooked.
