How it was done: some graphic apps for iPad, like Infinite Painter or ProCreate, provide the log function which records every stroke you put. This funktion is often on by default, so be aware what you're doing - even deleted strokes remain in the log file. You can playback the log files latel and export them as MPEG movies.
