Also it’s dark chocolate ya supposed to be bitter lol idk why she made it seem like chocolate isn’t naturally bitter and he sugar and cream is what gives it that sweet taste we all love. I personally love a chocolate that is 55%-85% dark because of the bitter flavor.

I replace a tablespoon or so of the flour with coarsely ground buckwheat flour (not Bob's Redmill: too fine for good flavor) in brownies and almost anything that calls for flour, for great flavor. Coarsely ground buckwheat can sometimes be found in bulk bins in natural foods stores.

IMO you need both cocoa powder and chocolate chips/ chunks to make the ultimate brownie. The only exception I’ve found is Alice Medrich’s Best Cocoa Brownies, which is the richest fishiest brownie recipe with only cocoa powder and no chocolate.

Glad you're loving the content! Brownie edges will always be a little firmer than the centre but if your edges are hard, it's usually a sign of baking too long or even the bakeware you're using!

@@Cre8tiveOne66 - try a pyrex glass pan. nonstick coatings are really terrible for your health and doesn't seem to work well for baking either. pyrex is totally nontoxic and works great. could the temp in your oven be too high? wish you all the best. please, please replace any and all of your nonstick kitchen supplies with safe nontoxic ones ASAP ❤
Totally agree. I mean I'm not familiar with that brand. I have some Ghirardelli Dutch process. But a denser more fudgy brownie wins every time. Fluffy brownies make me sad.
I have a question I made brownies two days ago, I had double the recipe to get 12 oz plus 4 tbsp, but I had used Droste dutch cocoa and hershey special dark because I didn't have enough Droste. The results was a very heavy almost bitter brownie. I thought it was because I put too much cocoa and not adding enough butter plus adding extra eggs when in the mixing the cocoa and butter didn't melt with the recipe I used. I wish to have your take on it. Also what can I do with the brownies I currently have because I don't want to throw it away, but I am not happy with the product. Thank you

Hershey’s Special Dark Cocoa is Dutch processed. It used to be a mix between Dutch and natural cocoa now it’s all Dutch processed.

That's good to know. Dutch process cocoa powder is insanely hard to find in my area. Now I know how to easily get it

A very good trick is to bloom the cocoa in hot brown butter. That makes the best brownies ever.
I make brownies that way
i mix espresso with hershey’s natural. & i always make sure to bloom the chocolate too!
