I think the 64 dominos in the ring is arbitrary; it just happens to be the number of outer bases on a full ring using Lego train track pieces of that curvature. Then again, maybe that was deliberately chosen by the designers of the Lego pieces themselves!

It's a quirk of mathematics. When making something like a gear, it's easiest to divide the circle by 2 repeatedly until you reach your desired level of detail. So things tend to favor powers of 2. Said powers being 2, 4, 8, 16, 32, 64, 128, 256, etc. Basically, the best method for dividing a circle symmetrically also results in powers of 2, and 64 is one of said powers.

To answer the question "Why exactly this size with 64 dominos?": Well, simple: This is the only available radius of lego train tracks. Other manufacturers also have wider radii, but for Lego it's just this one. 16 curved track pieces make up a full cirle, each holding 4 dominos.

He (or someone) should make another one that follows longer non-circular path. Use a little electric train to drive the reset process. The same kind of feedback loop could be used to controle the train's speed. But imagine the thing going around different curves, and maybe through tunnels, etc. Great fun!

I had the exact same thing in mind. I searched through the comments to see if anyone else had said it and found this one. The domino lifting arms hang over the outer rail of the track, so a train motor cannot fit on it. Maybe that is why he has a motor in the middle turning the resetting arm. All you have to do is raise the domino line up higher from the track so the train motor will fit under the lifting arms. I'm thinking of trying it to see if it will work.
