Oh Heidi, Thank you so much for this video! My rhubarb is growing so well, but I've honestly been at a loss how to use it. Last year at this time (before I was diagnosed with a massive brain tumor) I hadn't been able to get into the garden... I can’t grow rhubarb here, I think it’s just too hot. My Dad is from Illinois and we lived there twice for a total of about 5 years. Rhubarb was a staple in most gardens, all my aunts grew it. Dad had 9 sisters. I remember liking the strawberry rhubarb jam. Your pies always look so impressive! I enjoy seeing the pictures of your creations, they are always beautiful. Shalom.
I wondered if it preferred cooler climates as it is the first thing to start popping up even when we are going back and forth from heavy rainfall to heavy frost or rather rarely, even snow but it still just keeps growing
You didn't say where you live, but if its too hot you can still grow it like an annual garden vegetable. I live in central Florida, I grow KangaRhu rhubarb, its the most heat tolerant. I plant seeds in late August/ early September and transplant the seedlings in October. It grows all winter and I harvest the stalks in February/March. Sometimes it will go into April before bolting. I haven't tried saving seeds but that might be a good idea. Maybe get a plant that is acclimated and able to become perennial.
@@blessedbloominghomestead9134 oh! If you live in NE Florida, you might get the KangaRhu to be perennial! I live in southcentral (plant city/winter haven area) too hot to hope for the crown to last here but it just might up there. 👍

Mine first bloomed a couple of years ago. When it does this, break off the whole flowering stalk all the way to the base. Unless you are wanting to collect seed, I recommend doing this so you will continue to get thick and healthy stalks on your rhubarb, otherwise the energy will go into the flowers and seeds and not the stalks

Do you worry about the oxalate content of rhubarb? I used to go NUTS with preserving it, but I've dialed back a bit once I learned it was so high in oxalic acid.
No, I do not allow such scare tactics to worry me because it is all about moderation on any one food. I do not eat a ton of rhubarb and most oxalates get cooked out anyway so making syrups, jams, pies, and more should never be a concern
@@RainCountryHomestead Thank you! I've read mixed information about whether oxalates actually cook out. That was always my thoughts, but I have some clients who can't handle anything like rhubarb (cooked or not) so it got me thinking! Thanks for your insight.
