How I Cook Pepperoni Pizza on the OONI KODA 16

  • Ooni pizza ovens have long been renowned for cooking Neapolitan, thin crust pizza in just 60 seconds. However, i like my pizza to be a little thicker and slightly more crunchy than the traditional way. I made this video to share with you how I use the Ooni Karu 16 to cook a 120 second pizza, with a crispy crust, melty cheesy top and a more baked finish. I hope you enjoy!

    PIZZA DOUGH RECIPE - used in this video (Bakers Percentages)
    100% - Caputo Nuvola Pizza Flour
    67% - Warm Water
    2.8% - Fine Sea Salt
    0.3% - Instant Dried Yeast
    METHOD
    Mix yeast & water, leave for a minute to hydrate
    Mix dry ingredients together (Flour & salt)
    Combine dry and wet ingredients in bowl, hand mix until it forms a large ball.
    Bulk Ferment for 2 hours at RoomTemp.
    Divide & shape into dough balls
    Second fermentation - 24/48 hours Cold Temp.
    Bring up to room temp before stretching & cooking.

    You're absolutely right with this Tom, I do exactly the same & find that the results are much better than shorter cooking tine at full temperature.

      Thanks for the comment David! Yea its something i do most of the time now, i know the classic way is 60 seconds, but ive cooked now so many times that i just feel like i enjoy a more well done crispy base better

    A little late commenting, but what table are you using and would you recommend. Currently using a large wooden outdoor table and would prefer a smaller compact collapsible table. I am using the koda 16. Cheers

      Hey! This is just a camping table, not the most sturdy though, If you have a look through my videos i've done reviews of the different tables that i've got, one of my favourites is the Ooni collapsable one 👍🍕

    Hi buddy.
    Can I use a big gas bottle for forklift truck ? I have propane gas tank which I can use 😁 and what size of gas bottle you can recommend ? For one use in a week to make 3 pizzas for my family.

      Hi Mate! I use a 13kg bottle, that lasts me around half a year. I alternate between gas and wood though and use it all year round. So my guess is at the rate you will use it you'll get a year out of it. As for the forklift truck bottle, i have no idea?! im not sure the connection would be the same, but if it is i guess propane is propane!

    Do you prefer the Koda 16 over the Karu 16 for every day pizzas?

      Good Question! Well the soda 16 is definitely easier, but i really like to multiple fuel options of the Karu16, if i had to pick just one it would be the Karu 16!

      Yes, to clean the stone i just do a rally hot burn and let everything turn to ash, then brush it down. They're kind of self cleaning
