Chanterelles are amazingly. I’ve even used them in desserts. As a flavoring for ice cream, cheese cakes, or just candied. Or throw a handful of them into a bottle of vodka for chanterelle cocktails.
one of my all-time favorites chanterelle mushrooms I absolutely love them I used to pick them when I lived in Oregon and down in Georgia I love them fresh or in the refrigerator after a while not too long but after they're dried at least the ones that I tasted had no flavor so I'll take them fresh the next time I get some I'm going to try freezing them and see how they do sometimes mushrooms don't like to be frozen. the mush comes out and leaves the room. keep ye powder dry

A funny little difference between Europe and America, we never wash mushrooms over here, it's literally a cardinal sin (or chicken but I think that's more to do with your health and safety guys forcing supermarkets to bleach shop bought chickens after slaughter, I imagine you all prefer locally sourced chickens?)....we use a wee little brush to gently clean them before picking, cut them off and leave the base and roots in situ in the woods. So back at home they're clean and ready to cook. I imagine it's fine to wash chanterelle, but boletus must get quite sodden?

I haven’t see chanterelles since I live in the NW.
it is common here to boil every mushroom for about 20 minutes and then use it as needed.
Seriously all chantrells need is some butter and salt... they are awesome! how can you even taste them over horsradish and hot sauce!
