How to Make Korean BBQ Chicken Lollipops

- In this video i'm going to show you how to make smoked Korean BBQ chicken drumstick lollipops!
If you don't want to go through the trouble of making your chicken drumsticks into lollipops, that's completely fine! Just follow along without making them into lollipops.
Also, if you don't have a smoker, you can follow along to this recipe using your oven too! I'd suggest putting the chicken on a cake rack with a tray lined with foil underneath to catch any sauce though to prevent making your oven a mess.
These smoked Korean BBQ chicken drumsticks were SO TASTY! I wanted to drink the Korean BBQ sauce. Here's the recipe below:
1/2 cup soy sauce
1/2 cup rice wine vinegar
1/2 tablespoon sesame oil
1/4 cup gochujang
1/3 cup brown sugar
1 teaspoon worth of finely grated ginger
4 cloves finely grated garlic
Heat all ingredients in a pot, bring so a simmer and stir often until thickened to a sauce consistency.
For the chicken lollipops, if you did want to go ahead with making them, I like to slice around just below the meaty part, making sure I get down to the bone, then using some paper towel to help grip the meat, peel the meat down and away from the bone until it's removed.
You can use your knife to tidy up any pieces left on the bone.
Don't forget about the pin bone, I usually just leave it in as it would be there anyways if you didn't make the chicken drumsticks into lollipops, just be mindful it's there! However making chicken lollipops does look really nice!
If you want to keep the bones looking nice on the chicken lollipops, you can wrap foil around the bones to stop them from dis-colouring too.
For this chicken lollipop cook, I got my Blackjack kettle going using the vortex method at 230c/450F and placed the chicken lollipops around the outside of the charcoal baskets for high, indirect cooking!
They took around 35 minutes to cook to a point I was happy with them, which was crispy skin, a good colour and around 85c/185F internal.
I then dunked each chicken lollipop into the Korean BBQ sauce and put them back in the BBQ for the sauce to set.
I repeated that process once more and then garnished the chicken lollipops with some spring onion and sesame seeds.
They were seriously tasty, the only thing I wish I done earlier was drizzled some of the Korean BBQ sauce over them once more before garnishing.

Hiya Aaron, love you vids but I was wondering if you do a couple more offset videos? I think most ppl get started on those, cheaper to buy, etc etc
Cheers mate, I’ll try however I’d never recommend someone use a cheap offset. I’d say more people start, or should start on a kettle🤘
@LownSlowBasics yeah, looking back I'd rather have a nice kettle in my back yard then the el cheapo I have now.. on the other hand it's fun to tinker with to improve performance (sealing edges, insulation)
Next time, try using a kettle cone for your briquettes, it does an amazing job.
