Love your gas stove! I would say that if you want less starch in your rice to use jasmine or basmati rice as they have 1/3rd the starch. Just a tip from your French chef friend in Seattle.

Looks good. I learned to cook watching my abuelas they were old school Boricua cooks. I use Achiote Oil for natural coloring to rice / beans. Lots of Calabaza to flavor and thicken my beans along with Sofrito and Achiote Oil. You made your cooking segment fun and very easy to follow. 🇵🇷
Want to give this great recipe and twist? use thighs cut 4 ways or boneless instead of breast, season to taste... Simmer in medium heat for 3min on each side then throw in the sofrito until the sofrito is fully cooked; then + the remainder of the condiments as in the video and let the chicken cook covered 4 about 5 min or until almost cooked.. The 🐔 will create enough broth no need for extra broth just a bit more water and more salt and chicken bouillon to taste. Add a teaspoon of oregano and green olives optional. Add the rice, cook and there you have it.
Do you add sausage to your beans? My grandfather adds sausage to his along with bell pepper and onion. We always called them Puerto Rican beans. If so, can you post a recipe for that? Thank you!
I get where you are coming from! It was a struggle for me to get it right for awhile! I'm going to do a video on it along with arroz con gandules! The water ratio to the rice is important and I noticed there's a difference if you are using long grain rice vs medium!

How many pounds of chicken did you use for 2 cups of rice?
I'm not sure of the pounds but I used a family pack of chicken tenderloins and cut them in small pieces

You can add whatever makes you happy 😊 that doesn't make my hubby happy so it's left out. But olives is also good with this dish👍
