This video applicable only for online ups as you say the working diagram. But offline ups works some different way, like, when mains available ups charged the battery as well as bypass the mains to output socket, offline ups use the battery when mains not available, otherwise it bypass mains . Here mains mean main electricity/home electricity/main line. You have to explain both online and offline ups working procedure.

Yes you can but you have to use external transformer to charge the battery because ups can't charge over 30 amp battery
