Belgian person here: these waffles seem to up to code, but they are actually Luikse/liege waffles (belgian town) as a belgian waffle does not really exist. For authenticity you shouldn`t spread out the dough inside the waffle iron, just put it in the dough ball and press down. I can also advice the strawberry whipped cream combo.

Okay, I’m gonna place this rant here because I don’t know when I’ll ever get the chance to rant about liege waffles: I work at a mom and pop gelato and coffee shop. We specialize in gelato and, you guessed it, coffee. One year, some candy convention salesman convinced our owners that these liege waffles would boost business (we’re already a very popular local staple so we didn’t need the boost) and give our customers something different on the menu. So they bought the waffle irons (which were huge and would burn you if you even got one foot away from them) and the pre-made dough. Let me tell you... they sucked! It took 6 hours to proof these little jerks and if they proofed too long they would deflate. The waffle iron was so sensitive with its heating system that we couldn’t wash it with soap and water, we had to hand scrape the burnt sugar remains every night resulting in it taking an extra hour to close the shop down. These waffles took 6 mins each to cook and since we were mainly a coffee/gelato joint it was very easy to get distracted by other customers coming in resulting in a lot of burned waffles. This in turn resulted in customers waiting anywhere from 10-30 mins for a waffle the size of a hockey puck. On top of that, not many people ordered them, they found it a weird thing to have in a gelato shop and wouldn’t order them. We couldn’t even give them away as promotional items! After a year of bad reviews from both employees and customers about the waffles, the owners decided to no longer serve them much to everyone’s relief. That being said, the waffles were delicious, and if you’re in a specialty place like this that serves them all the time it’s worth all the extra work. Great video!

The name is quite confusing, the waffle's recipe is from the district of Liège (French speaking side), and "Limburg" is the name of another district (Dutch speaking side).
Also the Lion is the emblem of the Flemish side (Dutch), as the rooster is the emblem of the Walloon side (French).
So here we have a Flemish company that makes Walloon waffles.
... Yup, Belgium is a bit complicated!

I thought those were sugar, but wasn't 100% sure. At first they looked like salt, but no way would they do that to a waffle. MAYBE to a pretzel or some other savory dough (even then, that would be a lot of salt), but definitely not to a waffle. Then they looked a little like white chocolate, but that didn't make sense either and they didn't sound like chocolate. Had to be sugar. They must caramelize in the dough, at least on the outside... sounds so good.

      @@wietsehellinx559 That.
I respect the opinion of the main comment here but it's a bit weird to call it authentic when they don't do it the authentic way. You don't really need the "brand" of Belgian waffles to know that a waffle is tasty!
Plus it would then make more sense for you to take creative liberty !
Not that you cannot do it with a Belgian waffle, of course.
It's just that some people are gonna get triggered when they see you aren't doing it like you said you would...A bit like basically everything else when you think about it.

I wouldn't really call these authetic after they've been stretched and flattened to accommodate more toppings inside the too wide holes. It's definitely not a Belgian waffle shape which is supposed to have deeper not wider holes. And you're normally supposed to press the waffle iron on the ball of dough as is so that you get a thick, rounded waffle that's crispy on the surface and chewy on the inside. These look kind of soggy coming out and look even more sloppy after toppings are slathered on.

They didn't show all the steps but for these it's flour, milk, eggs, sugar, salt, baking powder, butter, perhaps baking soda for color (look up waffle recipes). They should add vanilla but that's expensive. The white lumps are pearl sugar. Real belgium waffles don't use backing powder but use yeast instead (which is why some are saying these aren't belgium waffles) and the dough takes hours to proof (but this also adds flavor that these are missing) and you can see the difference between the two if you look up liege waffle recipes.

Ivy G Yeah really. We had a stall at an open market and sold American Hotdogs. We used hotdog buns made of long pancakes, instead of hotdog sausages we used tuna mixed with a great freeze dried bolognese mix and cilantro. We substituted the mustard with a hot sauce or Japanese wasabi and mayonnaise, each hotdog came a small American flag toothpick ... they were a huge hit. The locals loved the American Hotdogs, local news covered this as the best authentic American Hotdogs ever.

You can make authentic anywhere. Just need to respect the recipes and ingredients . Old Lady in Belgium may have her own take that isn't traditional. and/or authentic.

I lived in Bruxelles in the late 90s, the waffles didn't look like these. A lot of the production seems really inefficient.

I’m from Belgium and have a Belgian nationality (and have lived there all my 18 years of life), Belgium has two types of waffles “Brusselse wafels” and “Luikse wafels” the first type are from Brussels and are bigger and rectangular, they’re also more airy and are often dusted with powdered sugar. While the second type are from Liège, they are smaller and have more curved edges, the batter contains little chunks of sugar that kind of liquifies while baking and are more dense.
The waffles in this video are the second type and while these may not be created authentically, they still fit all the criteria.
(Sorry for rambling and any kind of spelling/grammar mistakes.)
