First trick, do not crash. Second trick, skid whenever possible. Third trick, use the path shown in this video, it's the fastest one if you master it and that helps. Fifth trick, heavy karts have a higher top speed but are trickier to handle in some of the curves, avoid them here if you have trouble. Avoid light karts which have a lower top speed (they can also beat the ghost by a lot, but it's harder). Sixth trick, train and do not despair. Remember that the first lap of the ghost is the hardest to keep up with, Suzanne drives worse in the second and third lap. Under "Single Player" in the main menu, you can choose to race a ghost as a "game mode". You can watch existing replays, make your own replays, and race against any replays. Make your own replay and then try to beat it, again and again.
I constantly manage to stay head to head with the ghost during the first two rounds, but for some reasons the ghost always beats my multiple seconds during the last round, and I do not get why.
If memory serves me well, the third lap is where the ghost is the slowest, and the first lap the fastest. If you manage to keep up with the ghost during the first two laps, you should have good odds to win. Hard to tell what's going wrong without a replay or video of your attempt.
Try and use the path I'm using in this video, it's the fastest if you execute well. Alternatively you might skip using the beach secret path if you can't be consistent with it. The expert replay for the gold trophy makes a number of mistakes, with training you should be more consistent than it.
This is ridiculous really, why is this challenge is so much harder than all the others?

What I miss about this fun game is an extra secret level that is released when you have achieved at least all the golden cups.
