Estepario has the best technique of all but in term of groove and composition matt is better for example. It is impossible to say that one is better than an other one, it is to subjectif and there are too many criteria

As a former student of Gary Chaffee and a student at Berklee in the late 1970's I can so appreciate this. Gary was one of the first to teach poly rhythms. I thought back then I was good to be able to play groupings of 3,5,7. You my friend take it not only the next level but out of space. Thank you for raising the bar of technique.

Septuplets and quintuplets are NOT groups of 7 or 5. Septuplets and quintuplets are 7 or 5 notes under a certain pulse for example a quarter note, 8th note, etc. However, you can have groupings under 16ths, triplets, even quintuplets and septuplets. You can play let's say 16ths note and group them as 7-5 like Matt did at 4:56. You can play groups of 5 under septuplets or groups of 7 under quintuplets or whatever subdivision you want :) There's a huge difference. As far as recognizing them, it's a matter of repetition, being exposed to these frequently and training your ears to recognize them.

When I hear it I would think straight 16ths with a rest, my mind wouldn't go to septuplets just like it can be hard to recognize triplets when they aren't played in groups of 3 although I realize it's possible.

When it says "5 grouped as 32" or "7 grouped as 43", what does that second number signify? I can hear/see the quintuplet (5/8) or septuplet (7/8) feels over the bar/loop, but what are the larger numbers about?

It's the groupings of the 8th notes. It's not a large number. It follows the loop. So you count 1-2-3 1-2 for 5 and 1-2-3-4 1-2-3 for 7
