    *Ingredients:*
    - 1 cup urd dal (pigeon peas) or moong dal (split yellow lentils)

    - 1 medium onion, finely chopped
    - 1 medium tomato, finely chopped
    - 2-3 green chilies, slit
    - 1-inch piece of ginger, grated
    - 4-5 garlic cloves, minced
    - 1 tsp cumin seeds
    - 1/2 tsp turmeric powder
    - 1 tsp red chili powder
    - 1 tsp garam masala
    - Salt to taste
    - 2 tbsp ghee or oil
    - Fresh coriander leaves, chopped for garnish
    *Instructions:*
    1. *Cook the Dal:*
    - Rinse the dal thoroughly under running water. In a pressure cooker, add the rinsed dal, 2 cups of water, and a pinch of turmeric powder. Cook for 3-4 whistles until the dal is soft and mushy. Set aside.
    2. *Prepare the Spinach:*
    - While the dal is cooking, rinse the spinach leaves and chop them finely. Set aside.
    3. *Make the Tempering:*
    - In a large pan or kadhai, heat ghee or oil over medium heat. Add cumin seeds and let them splutter. Add minced garlic, grated ginger, and green chilies. Sauté until fragrant.
    4. *Cook the Vegetables:*
    - Add the chopped onions to the pan and sauté until golden brown. Then, add the chopped tomatoes and cook until they turn soft and mushy.
    5. *Combine Spinach and Dal:*
    - Add the chopped spinach to the pan. Cook for 3-4 minutes until the spinach wilts. Add turmeric powder, red chili powder, and salt. Mix well.
    6. *Mix in the Dal:*
    - Add the cooked dal to the spinach mixture. Stir well to combine and let it simmer for 5-7 minutes. Adjust the consistency by adding water if necessary. Add garam masala and mix well.
    7. *Finish and Serve:*
    - Garnish with chopped fresh coriander leaves. Serve hot with steamed rice or rotis.
