    We get a large number of eels in New Brunswick, Canada. We have the highest tides in the world and they probably also come in on the tidal bore here. I've never seen anyone consider them valuable. I've caught them when I was young when they are yellow/green while fishing and was disgusted and disappointed because I didn't want to catch eels. Interesting. I learned something today.

    they can be very delicious. i mean, the adults. people pay a lot for quality eel.
    its just that they are quite rich in fat, but thats no problem if the recipe takes that into account. they are perfect for doing smoked fish and also for grilling / BBQ, while other fish tend to get dry in these processes the eel comes out perfect. But they are not good cooked or as filets.

    but you would need to check if these you catch in Canada are the same species we have here in Europe. If its the same species, you can turn them into a delicacy with the right recipe.

      No, the American eel is a different species.
      European eel (Anguilla anguilla) and American eel (Anguilla rostrata).
