Just caught the end of your live, so like a trooper, just watched it back now. Centennial in a Stout, interesting. I brewed the American Stout recipe from the "Brewing Classic Styles" book last year. Probably my fav Stout. You also mentioned a Caramel malt at 400? WTF? Is that the Lovibond scale, or something else? It sounds more like some sort of Roasted/Black Patent color. Caramel 400 is like a Crystal 150 i believe.
