Dondakaya, Vankaya & Beetroot Pachadi || 3 Easy Vegetable Pachadis || Infinity Platter || 2022

  • You’re going to LOVE these easy Vegetable Pachadi recipes!
    1) Dondakaya Pachadi -
    In a pan, add 3-4 teaspoons of oil. You can use oil you like.
    Add 4-5 green chillies. Add the chillies depending on how spicy you want your pacchadi to be.
    Next we add 250g dondakaya, 1/4 tsp jeera and cook for a few minutes.
    Season with rock salt or any salt you like. Add 1/4 turmeric and cook for a few minutes.
    Pour 1/2 cup water, cover the lid and cook for 10-15 minutes.
    Add 1/2 inch piece of tamarind and cook without the lid for another 10-15 minutes or until all the liquid evaporates.
    Turn off the heat and leave it aside to cool for 10 minutes. Once it’s slightly cooler, put it in the blender and blitz until you get a nubly mixture and transfer to a bowl.
    For the final step, in a pan, add 2-3 tsp oil, 1/2 tsp Sai minapappu, 1/4 tsp Jeera, 1/4 tsp mustard seeds, 2-3 dried red Chilli and sauté for 5-10 seconds. Add some curry leaves and in 5 seconds, remove immediately from the heat and pour into your dondakaya mixture. Mix well and it’s ready!
    2) Vankaya and Dosakaya Pachadi -
    In a pan, start by adding 3-4 tsp of oil.
    Next add 4-5 green chillies , 250g Vankaya, 1/4 tsp turmeric, 250g tomatoes, 1 tsp salt, 1/4 tsp Jeera and sauté for a few minutes and 4-5 pods of garlic and sauté again.
    Cook for 10 minutes and leave to cool
    Add the mixture into the blender with 1/4 tsp Jeera and 5-6 garlic pods and blitz until you get a smooth paste.
    Add this mixture to 250g fresh Dosakaya which was desseded and mix well. Add some freshly chopped coriander leaves.
    For the final step, in a pan, add 2-3 tsp oil, 1/2 tsp Sai minapappu, 1/4 tsp Jeera, 1/4 tsp mustard seeds, 2 dried red chillies , 4 garlic pods, 1/4 tsp turmeric and sauté for 10 seconds. Add curry leaves and in 5 seconds, once the mixture turns a little brown, remove immediately from the heat and pour into your Vankaya Dosakaya mixture and mix well. Garnish again with freshly chopped coriander and your pacchadi is ready!
    3) Beetroot pachadi -
    In a pan, start by adding 3-4 tsp oil.
    To this, add 4-5 chopped garlic, 3 chopped green chillies, 1/2 tsp Sai minappappu, 1/4 tsp Jeera, 1/4 tsp mustard seeds, 1 dried red Chilli, curry leaves and sauté for a few minutes.
    Add 250g grated beetroot after squeezing out all its liquid and sauté for a few minutes.
    To this, add salt, 1/4 tsp turmeric and cook for 10 -15 minutes and leave it to cool.
    Once it’s cool, add 1 - 1 1/2 cups of yoghurt and mix well.

    Hi Ashritha very nice and simple receipes . I don’t no dondakaya pachadi receipe. Even vankaiya pachadi also different style. My mom used to burn big brinjal on stove and remove the skin and just mash and add salt,onions and tempering. Thank you so much for sharing with us.❤❤❤❤

    For talimpu, oil must be heated before adding ingredients. There is a sequence for talimpu.
    Mustard seeds, after spluttering, add minappappu, then mirchi last is karivepaku. Otherwise mustard oil will not get released properly

      unnecessary tips like these made me a very slow cook and my food never tasted like my mom's or mom in law's. no significant benefits came out of this. now I do not pay very much attention to these tiny details, now my food is tastier than ever and now I enjoy cooking also.     I add garlic as well while frying dondakaya at end. You can replace dosakaya with raw mango. You can add dhaniya powder or cilantro in all chutnies.

      It's called dosakaaya. I guess it's a Telugu vegetable, a very versatile one. Can be cooked with dal, sambaar, with tomato or by itself adding some milk in the end, used in a pachhadi as shown in the video. It is a watery vegetable, when it is a little ripe you can eat in raw too. Just can't make fry curry with it. It is used to make instant avakaaya (or ooragaaya) which is good for a few days. I love to eat its seeds if they are not bitter sometimes. So when cooking check the seeds taste and a small piece of dosakaaya and decide what recipe you can make out of it. It belongs to cucumber family.. can say Andhra cucumber maybe 😊
