you've done a great job with this, did think the inverter needed bigger cables but im no pro! Love the kitchen, everything looks so neat. I built mine with ply so its annoyingly not that great. Yours just looks well finished so definitely regret that! Great job

A 3Kw inverter will power pretty much any induction hob just make sure the battery can handle the Amp draw, every 1200W from the inverter is roughly 100A from the battery so if you intend to use the full 3000W you'll need a battery BMS that will handle at least 250A or multiple batteries that can handle that draw between them ?
The build is looking good 😎

Do your homework on the induction hob. One channel I watched put one in To go electric and it used so much power that they switched back to gas!!! van looking goooood 👍

Yeah I'm going to get the lowest wattage one possible. Thanks for the support!

Be careful crimping with that pair of pilers - you might not get a very good all round connection and that could lead to hot spots.
Suggest you invest in a proper crimp tool - they aren't that expensive and you will be safe.
Otherwise looks fantastic. I'm just about to start the electrics on my van build - its scary !!
