Dude this fight was absolutely great... but although I love Franky, why didn't they animate Law attacking Big Mom or Zoro using Dragon Twister against Kaido like this?

Sadly not every fight can be of this quality, it's just not feasible, especially for a weekly anime. Lots of scheduling and allocating of budget, animators, freelancers, etc. Some episodes are just going to get the shorter end of the stick.
As for why this moment over the others you mentioned, maybe they wanted to allow Franky some time to shine since Law and Zoro have had plenty of time in the sakuga spotlight.

@@MrEdit-ic7th That I understand. Also if you think about it with ep 1015/16/17 all together: That's almost an entire movie's worth of just insane fight animation. To be honest, I wouldn't mind them taking more breaks and would have prefered them putting their effort into the anime instead of making Film Red. I'm not complaining 😊 I'm actually happy with what we have so far.

​@@mariaagnesacain9505Franky can't have it sadly...Brook doesn't really need Haki due to how he can just attack the soul of the admirals (Unless they're soulless) Chopper probably can't get it due to him focusing more on support than fighting, Ussop will need to gain it somehow just to gain an edge and Nami also can't get it due to her fighting style of just summoning lightning and rarely engaging with hand to hand combat but most likely due to her managing the navigation...
