Instant Pot Bacon Ranch Chicken Sandwiches

  • This Ranch Bacon Chicken recipe cooks up a rich, creamy cheese sauce and adds smoky bacon to make fabulous sandwiches, salads, and casseroles. Join Jenn and Barbara from Pressure Cooking Today and we'll teach you how to make this quick and delicious weeknight meal.
    Today we're cooking in an #InstantPot; however, this recipe works with ANY brand of electric pressure cooker, including the #NinjaFoodi #Zavor or #PowerPressureCooker.
    Ingredients
    1 tablespoon butter
    1/2 cup chicken broth
    1/4 teaspoon red pepper flakes
    1 tablespoon dried parsley
    4 large boneless, skinless chicken breasts (about 2 pounds)
    1 packet (1 oz) ranch dressing dry mix
    2 tablespoons cornstarch
    2 tablespoons cold water
    8 ounces cream cheese, cut into about 1-inch cubes
    1 cup shredded Cheddar cheese, plus more for serving
    1/4 cup real bacon bits OR bacon, cooked crisp and finely crumbled
    8 to 10 sandwich buns, toasted

    New to the channel! Really enjoy your videos. I've been pressure cooking for 12 years now, mainly using manual pressure cookers. Early this month l decided to get my first Instant Pot. I found an exceptional deal on the Instant Pot Pro. I really love it!
    I'm a vegan, so l'm now converting some of my vegan recipes for the Instant Pot Pro.

    Looks delicious…I’m wondering how you would thin it out if you wanted to serve it over egg noodles…add milk? cream? Chicken broth?

      Thanks! That sounds like a great way to serve it. You could half the cornstarch so it doesn't thicken up as much and then if it still isn't as thin as you'd like, add some chicken broth a little at a time until you get the consistency you'd like.

    When you use the paddle attachment on low, you wouldn't put all the chicken breasts in at once, right?

      Depending on your mixing bowl, you can do half of them if the breasts are large or all of them if you have a large mixing bowl and the breasts aren't too large.

    How much water you add for this or any other recipe ?

      We use 1/2 cup of chicken broth for this recipe. Typically for a 6-quart pressure cooker, you'll use 1 cup, but chicken releases a lot of liquid as it cooks, so you can use less.
