I started practicing wrapping today. But, first let me say, I have the same wing nuts you have and put them on, and I found that they tighten up, and I'm constantly having to loosen them. So, I went back to the black knob, which has that white teflon ring. This is what the black knob is for. It prevents the nut from backing off or tightening up. I would like to see your rod support stands. I'm using the ones that came with my kit.
Is there a reason why the thread is passing under the spool instead over the spool? I'm new to this, and I just received the same wrapping station you have. In the box was a 1/2' piece of what looks to be hot glue stick. There is no information on this.

I have the same hand wrapper. I replaced the black spool tension knobs with wing nuts (like your setup) and it is much better 👍🏻

The only option that I did to mine was I traded out the springs for magnets and really like the precision tension I get.

By wrapping the rod, but are you asking how to start the wrap on the blank?
how much tension do you use?
Just depends on what I am doing. I do however tend to use a little more than needed sometimes.
This the one I use but I have 2 pole stands connected on the sides
