Synfig-Studio - Intermediate - Flower Growing

This video was originally made for instruction in our centre in Red Deer, Alberta. We are placing them online at the request of our students, so they can continue at home. Due to Covid 19 & social distancing we no longer have in centre camps.
Synfig Studio wants to keep things moving all the time, so how do you start a new piece of animation in the middle of you clip?

How does he get the tangent handles exposed at 11:20? By a keyboard shortcut? When I click the corners I just get the vertex handles.
