Cinamatisang Manok/Pork here in Pampanga is included in the family of Sinigang and it is masabaw whenever we cook it. We are sauteing onion, garlic, patis, camatis we are adding water to boil and then we are putting cabbage/pechay or bukchoy plus labanos hehe

Usually pork din at yung spare ribs na cut into cubes,After ginisa sa garlic and onion, ung chopped tomato( mga ten pcs medium size ang ginagamit ko) ilagay sya at hayaan lang mag simmer at lumambot lang ung tomato, tho pwede man na i food processor. then timplahin lang sa toyo and patis,outcome is ma sarsa kesa ma sabaw. May natikman ako na kinamatisan Pero pork chop. Really good. The only difference is that they really chopped the tomatoes in really small pieces. Then sauté it for a long time until it becomes a dark and concentrated sauce. This is awesome. I will cook this based on how I remember it. Very close to what you did. Awesome.

My Nanay uses kamatis even for menudo, when I was young, I remember! I aske why?! Comment ng brother ko, ... "Tan-Ga! Hindi naman uso tomato sauce dati! Amerkano lang nagdala sa Pinas nun!" we do this as well back home in Laguna, luto ng lola ko (from Nueva Ecija) passed on to my mom. We use chicken or pork , pero hindi combined. We use a lot of super red tomatoes, garlic, onions, kalamsi, then toyo. Sama sama na sila doon hanggang halos matuyo at manuot ung sauce. Kinamatisan sa iba para mapaliwanag kung ano un, pero sa bahay ang tawag tlg namin sa luto ay "TIIM".

Same procedure but I sear my meat with little butter and I put carrots and potatoes the rest are the same as how you cook it. My kids love it. Korean side dishes nman Ms Juday yung mga kimchi kimchi, anchovy kimchi 😊

Ang version ko ng kinamatisang baboy(liempo part) or manok... Same tyo ng ingredients.. diced chopped yun tomato ko.. i dont use patis.. but i use chicken cubes too.. no salt no bay leaf. No water added. Fresh ground pepper at sugar I add.. Then my version.. I add po Liver spread mga 5 tablespoonful lang.. it makes the sauce creamy and meaty. ❤❤❤❤❤
I cook that for my family..but my own version is,im putting ampalaya with it..and my family loves it..the sourness of tomato,the taste of ampalaya plus the natural taste of the chicken and tha saltiness you add..ahhh it's perfect..with just a little sauce from tomato😋you should try..

Hi Juday! Ang tawag sa amin sa Calumpit Bulacan is Asadong Manok. It is an heirloom dish. Our version is un masauce and not soupy. We marinade the chicken first sa garlic, kalamansi , patis and konti toyo. Better overnight. Then we fry the chicken. Not so much but the skin yun medyo nacrispy. We use thigh part. The whole thigh and leg. But i do A healthier version kasi airfried na ang chicken. Originally chopped or minced and onion and tomatoes. Then sauté onion, tomato and garlic. Dapat sangkutsang sangkutsa na sya and lumabas na un sariling katas ng kamatis. Then ilagay na un fried manok sa ginisang onion tomato And garlic na naglangis na. Halo konti then put some water para manuot sa manok un sarsa. Then magmamantika ulit sya. Season it according to taste with salt peper and patis. And that’s it! Di yan nawawala sa aming family feast. Third generation na kami sa pagluto nyan. Kung ihahambing sa ibang bansa pra syang curry chicken less the spices and herbs👍☺️

Ang masarap nyan is Kinamatisang Tinadtad na Baka. I remember growing up and kasama yan sa menu namin sa bahay. Masarsa din ang version ni Mudra, nagiging masabaw lang dahil mahilig sa sabaw ang kuya ko. Taga-Talaga Batangas si Mudra kaya akala namin e from Batangas yun kinamatisan. Masarap sya talaga. Yun kinamatisan manok na ang niluluto ko kasi mahilig sa chicken ang anak ko. 😀

Ang version ko ng kinamatisang baboy(liempo part) or manok... Same tyo ng ingredients.. diced chopped yun tomato ko.. i dont use patis.. but i use chicken cubes too.. no salt no bay leaf. No water added. Fresh ground pepper at sugar I add.. Then my version.. I add po Liver spread mga 5 tablespoonful lang.. it makes the sauce creamy and meaty. ❤❤❤❤❤

I cook that for my family..but my own version is,im putting ampalaya with it..and my family loves it..the sourness of tomato,the taste of ampalaya plus the natural taste of the chicken and tha saltiness you add..ahhh it's perfect..with just a little sauce from tomato😋you should try..

Hi Juday! Ang tawag sa amin sa Calumpit Bulacan is Asadong Manok. It is an heirloom dish. Our version is un masauce and not soupy.
We marinade the chicken first sa garlic, kalamansi , patis and konti toyo. Better overnight. Then we fry the chicken. Not so much but the skin yun medyo nacrispy. We use thigh part. The whole thigh and leg. But i do
A healthier version kasi airfried na ang chicken.
Originally chopped or minced and onion and tomatoes. Then sauté onion, tomato and garlic. Dapat sangkutsang sangkutsa na sya and lumabas na un sariling katas ng kamatis. Then ilagay na un fried manok sa ginisang onion tomato
And garlic na naglangis na. Halo konti then put some water para manuot sa manok un sarsa. Then magmamantika ulit sya. Season it according to taste with salt peper and patis. And that’s it! Di yan nawawala sa aming family feast. Third generation na kami sa pagluto nyan. Kung ihahambing sa ibang bansa pra syang curry chicken less the spices and herbs👍☺️
same as my sarciadong manok (without the sugar). ganyan ako mag-sarciadong isda . walang itlog and hinog na kamatis gamit ko para red and more saucy. di ko pa na-try sa pork. pero i think, masarap to sa baka. and also, the oily the better. :P

Ang masarap nyan is Kinamatisang Tinadtad na Baka. I remember growing up and kasama yan sa menu namin sa bahay. Masarsa din ang version ni Mudra, nagiging masabaw lang dahil mahilig sa sabaw ang kuya ko. Taga-Talaga Batangas si Mudra kaya akala namin e from Batangas yun kinamatisan. Masarap sya talaga. Yun kinamatisan manok na ang niluluto ko kasi mahilig sa chicken ang anak ko. 😀
