You did good Andy,as a pastry chef I do have a couple of suggestions,bet you knew that was coming,you need salt in a cake,and pastry,it’s the same as when you cook savory,it improves the flavor,also in biscuits.I do about 1 teaspoon to a pound (454g) if flour,lemon zest in the place of lemon extract gives you a less chemical taste.Though making a cake that way works,if you would like a lighter type cake,then cream butter,and sugar till light in color,add eggs slowly as you beat,then fold in your flour,baking powder,and salt,put in half the flour,then the milk,then the last of the flour,I would fold it in by hand,really doesn’t take anymore time to do,you really made a lovely cake Andy,and I hope you don’t mind my tips😊
