Yes you can do Fansipan and Cat Cat in a day if you start early morning but it will be very hectic and needs much more physical strength because you will get tired at Fansipan 600 steps trek to peak and cat cat also need some good amount of incline and decline walking. If you want to choose i would say go for fansipan no doubts.
