In Latvia, where I'm from, we make something that we call "Zucchini pancakes". It's super easy and delicious. You slice Zucchini in medium-thick slices, have couple of eggs beaten with salt, pepper and some garlic or/and onion powder in a bowl and some flour on the plate. Heat up the pan with some olive oil, coat both sides of the zucchini round in flour (doesn't have to be a lot of flour, just a very thin coat is enough), dip them in egg so it covers both sides and put them on pan. Cook on medium-low heat until each side is light brown and the zucchini has started to soften. Place them on paper towel after they are done to dry off excess oil and they are ready to serve. You can eat them just like that or with a dollop of sour cream and/or salsa. Makes a great side dish, finger food or appetizer. Alternatively, you can make these "pancakes" as dessert if you add sugar and cinnamon to the eggwash instead of salt and pepper. Possibilities are endless. :)
