I tried making it but I made the flour water slightly more watery so it ended up a little more on the slimy side than the crunchy side. It also might be because I added the slurry twice rather than once.... The sauce was really good doe!
Based on ur words, perhaps you're too worried empty section and go for second attempt. 1- use corn flour for crisper and light jeon texture 2- when it comes to batter testing, use back of spoon for pouring test, in this case is has to drop like soy sauce. 3- trust the process. Do just once, repeat upon failure. Its the beauty of cooking✨
